hese recipes all come from a battered notebook where I copied recipes when I was a kid. It is well used and covered with stains... The pages are starting to fall apart so I think it is a good idea to save those online.
The carrot cake has been a classic recipe in Switzerland very far back, they actually claim it was invented there. Who knows? The recipe differs from carrot cakes found in the UK and US - it has more carrot and is a very moist cake. Mostly it means a higher carrot/sugar ration, a lot of eggs and almonds (or hazelnuts) and almost no flour. It could probably be done gluten free replacing the wheat flour with an alternative.
The cake is better after a few hours' or overnight rest. It also freezes very well. And, as it is quite solid, it also "piles" quite well on top of each other.
I had made this for my wedding cake in the US and had almost more requests for the recipe than congratulations at the reception...

I baked an absolutely scrumptious cake last weekend for our church's Fall Festival. There was an auction, and the women in the chuch baked items as part of the auction. I entered my Snickers Cake, and it brought a good amount because my husband kept the bidding going and bought it! So this year I was able to taste it myself.

What better way to celebrate the end of our National Ice Cream Month week-long feature than with cake? Or should we say cupcakes? The Daily Kool family is headed out to a friend's house for dinner together tonight...of course, we're in charge of the dessert (we have a bit of a reputation). Apparently, President Ronald Reagan decided to help out the International Dairy Foods Association (IDFA) back in 1984 by recognizing this cool and creamy treat. How we possibly could not have known about this is beyond us...but, we would be remiss if we didn't honor President Reagan's memory by throwing ourselves wholeheartedly into the spirit of this very important holiday, right? Since the third Sunday of July is officially National Ice Cream Day, The Daily Kool will be featuring some "kool" ideas and recipes over the next week in celebration of this event. Oh yeah...we're definitely going to take advantage of this legitimate excuse to indulge in one of our sweetest obsessions!
