I can sometimes (not always) select and copy, but it's tricky, maybe inconsistent. Tested today using Safari 4.0.5 (6531.22.7) in Mac OS X 10.6.2 (10D573) at http://plan-international.org/ At the speed test referred from http://bkwld.com/blog/2009/06/cufon-speed-test/ when I triple-click, the selection (which should be a sentence or paragraph) appears to omit the first word; and the second of the three clicks appears to include part of the next paragraph.
In this second test environment (designed for speed testing, definitely not designed for annotation) the text can not be copied.
Didn't find any long cufon text there, only the orange sub-headings, through I found a longer example here: http://www.thesilverempire.com/ (sub-heading) When I triple click it selects without the 1st word, but with the 1st word of the next paragraph !?? 0_O
Checked for sIFR, can copy, but triple selects the line... The only time I've ever used this was to put a couple foreign characters, so I never noticed.
Thanks for highlighting this fact... copy is very important (specially educational stuff) - If I use a font renderer, I' mustn't forget to check this in the future!
