While we like to pat ourselves on the back for eating seasonally and locally, Barber’s contentious argument went, the foodie fad that grew to become the face of sustainable eating has failed to bring about the promised revolution. Industrial agriculture still rules, Barber argued. And as it keeps growing, more and more small farms and native prairie disappear under Big Ag’s plow.If we really care about changing our food system (as anyone who hopes to feed our growing world should), Barber believes we’re going to need a true revolution. And “The Third Plate“ is his thesis, over a decade in the works, for what that change must look like.Among other things, change means thinking holistically, embracing diversity in ingredient choice and cuisine, and shifting meat over from its vaulted place at the center of the dinner plate. But while the solutions Barber describes are frighteningly extensive, they also, in his telling, sound delicious. That, more than any warning about the consequences of continuing along with the status quo, could be thing that ends up making a difference.

  • At a home in the Romanian city of Iași, Carlson measured cortisol levels in a group of children ranging from two months to three years old. The caregiver-to-child ratio was twenty to one, and most of the children had experienced severe neglect and sensory deprivation. Multiple times a day, Carlson took saliva samples, tracking how cortisol levels fluctuated in response to stressful events. The children, she found, were hormonally off kilter. Under normal conditions, cortisol peaks just before we wake up and then tapers off; in the leagăne infants, it peaked in the afternoon and remained elevated. Those levels, in turn, correlated with faltering performance on numerous cognitive and physical assessments. Then Carlson tried an intervention modelled on the work of Joseph Sparling, a child-development specialist, and the outcomes changed. When half of the orphans received more touching from more caregivers—an increase in hugs, holding, and the making of small adjustments to clothes and hair—their performance markedly improved. They grew bigger, stronger, and more responsive, both cognitively and emotionally, and they reacted better to stress.

Give them a pat on the head if they have made an extraordinarily good job on a difficult task.” Watson acknowledged that children must be bathed, clothed, and cared for, but he believed that excessive touching—that is, caressing—would create “mawkish” adults. An untouched child, he argued, “enters manhood so bulwarked with stable work and emotional habits that no adversity can quite overwhelm him.” Now we know that, to attain that result, he should have suggested the opposite: touch, as frequent and as caring as possible
  • And yet touch is rarely purely physical. Field’s more recent work has shown that the brain is very good at distinguishing an emotional touch from a similar, but non-emotional, one. A massage chair is not a masseuse. Certain touch receptors exist solely to convey emotion to the brain, rather than sensory information about the external environment. A recent study shows that we can identify other people’s basic emotions based on how they touch us, even when they are separated from us by a curtain. And the emotions that are communicated by touch can go on to shape our behavior. One recent review found that, even if we have no conscious memory of a touch—a hand on the shoulder, say—we may be more likely to agree to a request, respond more (or less) positively to a person or product, or form closer bonds with someone.

  • Then why was he killed? Without knowing who gave the orders, it’s possible to understand that the current political environment allowed for this to happen. Over the past year, in the wake of the annexation of Crimea and the war in eastern Ukraine, Russia has seen the rise of a new, much coarser and more doctrinaire political language. During the first decade of Putin’s rule, the Kremlin depicted its opponents as freaks or idiots, but now they are portrayed as outright enemies of their country. In a triumphant address to parliament last March, as Russia was formalizing its takeover of Crimea, Putin warned of “a fifth column,” a “disparate bunch of national traitors” determined to sow discord inside the country. Its members were obvious, if at first unmentioned: people like Navalny, an anti-corruption activist who had become the most popular leader in the country’s fractured opposition; Aleksei Venediktov, the editor-in-chief of Echo of Moscow, a long-beleaguered radio station that is one of the last homes for critical and liberal voices; and of course Nemtsov, a recognizable face​from all his years in politics, and a favorite opponent of pro-Kremlin activists and propagandists.

  • Why is it easy for some people to learn to read, and difficult for others? It’s a tough question with a long history. We know that it’s not just about raw intelligence, nor is it wholly about repetition and dogged persistence. We also know that there are some conditions that, effort aside, can hold a child back. Socioeconomic status, for instance, has been reliably linked to reading achievement. And, regardless of background, children with lower general verbal ability and those who have difficulty with phonetic processing seem to struggle. But what underlies those differences? How do we learn to translate abstract symbols into meaningful sounds in the first place, and why are some children better at it than others?
  • When Hoeft took into account all of the explanatory factors that had been linked to reading difficulty in the past—genetic risk, environmental factors, pre-literate language ability, and over-all cognitive capacity—she found that only one thing consistently predicted how well a child would learn to read. That was the growth of white matter in one specific area of the brain, the left temporoparietal region. The amount of white matter that a child arrived with in kindergarten didn’t make a difference. But the change in volume between kindergarten and third grade did.

  • The theory of motivated reasoning builds on a key insight of modern neuroscience (PDF): Reasoning is actually suffused with emotion (or what researchers often call "affect"). Not only are the two inseparable, but our positive or negative feelings about people, things, and ideas arise much more rapidly than our conscious thoughts, in a matter of milliseconds—fast enough to detect with an EEG device, but long before we're aware of it. That shouldn't be surprising: Evolution required us to react very quickly to stimuli in our environment. It's a "basic human survival skill," explains political scientist Arthur Lupia of the University of Michigan. We push threatening information away; we pull friendly information close. We apply fight-or-flight reflexes not only to predators, but to data itself. We apply fight-or-flight reflexes not only to predators, but to data itself. We're not driven only by emotions, of course—we also reason, deliberate. But reasoning comes later, works slower—and even then, it doesn't take place in an emotional vacuum.   • last month, Bill Gates released a video of one of the latest ventures funded by the Bill and Melinda Gates Foundation: the Omniprocessor, a Seattle-based processing plant that burns sewage to make clean drinking water. In the video, Gates raises a glass of water to his lips. Just five minutes ago, the caption explains, that water was human waste. Gates takes a sip. “It’s water,” he says. “Having studied the engineering behind it,” he writes, on the foundation’s blog, “I would happily drink it every day. It’s that safe.”
  • In the first series of studies, the group asked adults in five cities about their backgrounds, their political and personal views, and, most important, their view on the concept of “recycled water.” On average, everyone was uncomfortable with the idea—even when they were told that treated, recycled water is actually safer to drink than unfiltered tap water. That discomfort, Rozin found, was all about disgust. Twenty-six per cent of participants were so disgusted by the idea of toilet-to-tap that they even agreed with the statement, “It is impossible for recycled water to be treated to a high enough quality that I would want to use it.” They didn’t care what the safety data said. Their guts told them that the water would never be drinkable. It’s a phenomenon known as contagion, or, as Rozin describes it, “once in contact, always in contact.” By touching something we find disgusting, a previously neutral or even well-liked item can acquire—permanently—its properties of grossness.

Intellectually, they knew that the drink was safe, but they couldn’t get over the hump of disgust. In another experiment, students wouldn’t eat chocolate that had been molded to look like poop: they knew that it was safe—tasty, even—but its appearance was too much to handle. Their response makes no logical sense. When it comes to recycled water, for instance, Rozin points out that, on some level, all water comes from sewage: “Rain is water that used to be in someone’s toilet, and nobody seems to mind.” The problem, he says, has to do with making the hidden visible. “If it’s obvious—take shit water, put it through a filter—then people are upset.”

  • Disgust has deep psychological roots, emerging early in a child’s development. Infants and young toddlers don’t feel grossed out by anything—diapers, Rozin observes, are there in part to stop a baby “from eating her shit.” In the young mind, curiosity and exploration often overpower any competing instincts. But, at around four years old, there seems to be a profound shift. Suddenly, children won’t touch things that they find appalling. Some substances, especially human excretions of any sort, are seen as gross and untouchable all over the world; others are culturally determined. But, whether universal or culturally-specific, the disgust reactions that we acquire as children stay with us throughout our lives. If anything, they grow stronger—and more consequential—with age.
