If you have an iPad, Lemur is a customizeable MIDI controller that can sync wirelessly with a DAW like Ableton Live. You can program it to controller any parameter you want and is therefore not as limited as a physical controller.

If used in a classroom setting, you could collaborate with other musicians around the world, or simply use their uploaded project files as a resource for understanding how people use these DAWs to make music; i.e., analyze the project file like you would a score.
