Ingredients:
2 Hake Fillets of around 150g each 500g of Tomatoes 1 Onion 1 Clove of Garlic - un peeled ½ bunch of fresh Coriander 7 Saffron Threads
Preheat the oven to 160°C / Gas 3. Peel and slice the onion into fine rounds. Divide the tomatoes into even, thick slices. Finely chop the Coriander. Cut the Hake into large cubes. In a Tajine, place the tomatoes, onions, Saffron threads, whole garlic glove & season with salt and pepper. Cover and cook in the oven for 40 minutes.Roll to coat, the Hake in the chopped Coriander and add to the Tajine and put back in the oven for a further 20 minutes.
