Ingredients:
Fat
75g plain white flour
1 egg
75ml milk
55ml water
salt
pepper
Pre-heat oven to maximum temperature, then add a small amount of fat (we used goose fat, but the fat from roast beef would be good) to each section of a baking tray. Put in the oven for 5 minutes - until the fat is smoking.
Meanwhile, beat together the flour, egg, milk, water and seasoning to make the batter.
Remove the tray from the oven and quickly add a small amount of batter to each section then return to the oven.
Reduce the temperature to 220c then cook for 20 minutes until risen and golden.
This potato gratin dish is one I created to take advantage of the truly beautiful asparagus spears that were on sale that week. I put together heaps of tangy sharp cheddar cheese, luscious cream, fresh asparagus and earthy, waxy red potatoes. I love the way the asparagus delicately flavors the potatoes and the cheese sauce, accented with just a touch of herbs and black pepper.Since it turned out so well, my partner and my roommate urged me to write down the recipe for this asparagus and potato casserole. It smelled so good coming out of the oven they wanted to dig in right away but I was mean and made them wait until after I took this photo.
Sunday, our two boys decided to surprise us with a delicious breakfast in bed...a bowl of cereal is the extent of their culinary talents. As we were listening to them bustle about downstairs (yes, we know everything that goes on in our house), we had a debate as to who would spill milk all over the floor...yep, it was the seven year old! Poor things...they were so upset! Independence is always so important to little ones, but let's face it...those gallon jugs of milk are heavy! After we dried the kids tears and cleaned up the mess, we all sat down together for a family discussion...the thought was wonderful, but maybe next time they should surprise just one of us and recruit the other to help. Milk containers are just not designed with kids in mind.
What better way to celebrate the end of our National Ice Cream Month week-long feature than with cake? Or should we say cupcakes? The Daily Kool family is headed out to a friend's house for dinner together tonight...of course, we're in charge of the dessert (we have a bit of a reputation). Since there's going to be a pretty large group of kids at the house, we thought it might be fun to do something a little different for them.
Every year, the summer is filled with picnics, barbecues and other casual gatherings for The Daily Kool family. Most of these get-togethers are pot-luck events where everyone brings a dish for the guests to share. Needless to say, tables are always filled with a ton deviled eggs, fruit platters, sandwiches and cupcakes galore. So much for shedding those last few (okay, or forty) pounds...sigh. Since most of us tend to bring homemade items as opposed to pre-made trays, we are always looking for convenient travel caddies to hold our food.

I got This recipe from my sister more than 20 years ago. She made this whenever the relatives got together in the summer. It helps use up that entire zucchini you have in your garden. Enjoy :))
