これは、iPhoneが文字コードをUTF-8で送信するのに対し、auの端末ではJIS(iso-2022-jp) にのみ対応している製品があるため、iPhoneからの文字コードが違うことで文字化けを起こします。　これは、もともと多言語を扱うiPhoneでは、文字コード体系として多言語を扱うことのできるUnicode（ユニコード）を使用するように設計されており、そのためUnicodeの一つである、UTF-8でインターネットメールを送るようにしているのです。

もともと日本国内の携帯では、海外からの(JISコード以外の)メールを受信するような事まで想定されていない時代がありました。　auの場合は、端末の要求事項としてUTF-8の文字コードに対応しなくて良いとされていたのでしょう。　そのため、海外からのコード体系の違うメールやiPhoneからのメールを受信すると文字化けが発生します。また、英語(つまりアルファベット)はこの文字コードに依存しないケースが多いので、例えば英文だけのメールはauでも問題なく読むことが出来ます。　日本語でUTF-8を使ってメールを送ることも日本国内では少ない(通常、メーラーにしてもブラウザにしてもJISがデフォルトにされている)為、今までは問題にならなかったのが、iPhoneが普及するとau宛メールが文字ばけするという問題がどんどん出てくると思われます。

iPhone側ではこのようなローカル問題に対してはおそらく、個別の対応はしないと思われますので、au側がきちんとUTF-8でも読めるような端末を増やしていくか、或いは受信サーバー側でコード変換を行うか、またはiPhoneのアプリなどで送信時に文字コードを変更するようなものが出てこない限り、　下のSKEEME さんのコメントにあるように、現在のファーム2.0では、日本語環境のiPhoneではデフォルトでJISコードで出力するようです。　ただし、メールにUnicode文字が入っていたりするとUTF-8で送信するようですので、まだ当分はau宛のメールは文字化けに悩まされることになると思います。ますますauの庭がせまくなりそうです。
