What We Really Taste When We Drink Wine : The New Yorker - 2 views

  • Salzman first became interested in wine when he was a graduate student at Stanford University studying neuroscience (Ph.D.) and psychiatry (M.D.). “I was corrupted by some people who were very serious about wine,” he told me. Together, they would host wine tastings and travel to vineyards. Over time, as his interest in wine grew, he began to think about the connections between his tastings and the work he was doing on the ways in which emotion colors the way our brains process information. “We study how cognitive and emotional processes can affect perception,” he said. “And in the case of something like wine, you have the perfect example: even before you open a bottle to experience the wine itself, you already have an arbitrary visual stimulus—the bottle and the label—that comes with non-arbitrary emotional associations, good and bad.” And those emotional associations will, in turn, affect what we taste.
  • In one recent study, the Caltech neuroscientist Hilke Plassman found that people’s expectations of a wine’s price affected their enjoyment on a neural level: not only did they report greater subjective enjoyment but they showed increased activity in an area of the brain that has frequently been associated with the experience of pleasantness. The same goes for the color and shape of a wine’s label: some labels make us think that a wine is more valuable (and, hence, more tasty), while others don’t. Even your ability to pronounce a winery’s name can influence your appreciation of its product—the more difficult the name is to pronounce, the more you’ll like the wine.

In 1990, Gregg Solomon, a Harvard psychologist who wrote “Great Expectorations: The Psychology of Expert Wine Talk,” found that amateurs can’t really distinguish different wines at all, but he also found that experts can indeed rank wines for sweetness, balance, and tannin at rates that far exceeded chance. Part of the reason isn’t just in the added experience. It’s in the ability to phrase and label that experience more precisely, a more developed sensory vocabulary that helps you to identify and remember what you experience. Indeed, when novices are trained, their discrimination ability improves.

  • ‘“What if?” is a waste of time’ went the headline to the Cambridge historian Richard Evans’ piece in The Guardian last year. Surveying the many instances of public counterfactual discourse in the anniversary commemorations of the First World War, Evans wrote: ‘This kind of fantasising is now all the rage, and threatens to overwhelm our perceptions of what really happened in the past, pushing aside our attempts to explain it in favour of a futile and misguided attempt to decide whether the decisions taken in August 1914 were right or wrong.’

  • What is worse, counterfactual speculations spring naturally from deeply conservative assumptions about what makes history tick. Like bestselling popular histories, counterfactuals usually take as their subjects war, biography or an old-school history of technology that emphasises the importance of the inventor.
  • Women – as individuals, or as a group – almost never appear, and social, cultural, and environmental history are likewise absent. Evans, for his part, thinks this is because complex cultural topics are not easy to understand through the simplifying lens of the ‘what if’.
  • Counterfactuals, if done well, can force a super-meticulous look at the way historians use evidence. And counterfactuals can encourage readers to think about the contingent nature of history – an exercise that can help build empathy and diminish feelings of national, cultural, and racial exceptionalism.

  • Earlier this year, two forensic psychologists—Julia Shaw, of the University of Bedfordshire, and Stephen Porter, of the University of British Columbia—upped the ante. Writing in the January issue of the journal Psychological Science, they described a method for implanting false memories, not of getting lost in childhood but of committing a crime in adolescence. They modelled their work on Loftus’s, sending questionnaires to each of their participant’s parents to gather background information. (Any past run-ins with the law would eliminate a student from the study.) Then they divided the students into two groups and told each a different kind of false story. One group was prompted to remember an emotional event, such as getting attacked by a dog. The other was prompted to remember a crime—an assault, for example—that led to an encounter with the police. At no time during the experiments were the participants allowed to communicate with their parents.
  • What Shaw and Porter found astonished them. “We thought we’d have something like a thirty-per-cent success rate, and we ended up having over seventy,” Shaw told me. “We only had a handful of people who didn’t believe us.” After three debriefing sessions, seventy-six per cent of the students claimed to remember the false emotional event; nearly the same amount—seventy per cent—remembered the fictional crime. Shaw and Porter hadn’t put undue stress on the students; in fact, they had treated them in a friendly way. All it took was a suggestion from an authoritative source, and the subjects’ imaginations did the rest. As Münsterberg observed of the farmer’s son, the students seemed almost eager to self-incriminate.

Both had been repeatedly stabbed; his mother was dead and his father was dying. He called the police. Later, at the station, he was harshly interrogated. For five hours, Tankleff resisted. Finally, an officer told him that his father had regained consciousness at the hospital and named him as the killer. (In truth, the father died without ever waking.) Overwhelmed by the news, Tankleff took responsibility, saying that he must have blacked out and killed his parents unwittingly. A jury convicted him of murder. He spent seventeen years in prison before the real murderers were found. Kassin condemns the practice of lying to suspects, which is illegal in many countries but not here. The American court system, he said, should address it. “Lying puts innocent people at risk, and there’s a hundred years of psychology to show it,” he said.

  • As part of mammoth celebrations of the 200th anniversary of Norway’s constitution, the government is funding two artists to re-enact a "human zoo", which will open to the public on 15 May. Oslo’s original human zoo or Kongolandsbyen was central to Norway’s world fair in 1914. The artists claim that the new project, which they named European Attraction Limited, is meant to provoke a discussion on colonialism and racism in a post-modern world, engaging with Norway’s racist past in the process. Some anti-racism organisations and commentators have labelled the project offensive and racist. Is there any artistic value in the re-enactment of such a dehumanising spectacle, especially in a world not yet fully healed of racism? Is this an abuse of art? Or will the re-enactment reverse the modest gains of the equality struggles, especially when the world engages with the subject of race so superficially?

This choice follows the logic of utilitarianism: More good is done by saving five people than harm is done by killing one. This "really undermines the notion that utilitarian preferences are merely the result of more deliberation," said Duke, who also co-authored a paper on the study, charmingly titled, "The drunk utilitarian: Blood alcohol concentration predicts utilitarian responses in moral dilemmas." There's a fabulous irony in the idea that drunk people are emotionally steeled rationalists who are willing to do whatever it takes to save lives. But Duke and his research partner, Laurent Bègue, aren't necessarily arguing that drunk people are ace philosophers and logicians; it's more that their findings challenge common assumptions about how people make decisions.

It could be ordered by atomic weight, rather than atomic number, it could include isotopes, it could exclude elements that don’t exist in nature, and so on,” he says. “The way we classify things is always a function of both mind and world.”

He is a senior consultant at St. George’s Hospital, in London, and he helped to pioneer a kind of surgery in which patients are kept awake, under local anesthesia, so that they can converse with their surgeons while they operate, allowing them to avoid damaging what neurosurgeons call “eloquent,” or useful, parts of the brain. Marsh has been the subject of two documentary films. Still, he writes, “As I approach the end of my career I feel an increasing obligation to bear witness to past mistakes I have made.” A few years ago, he prepared a lecture called “All My Worst Mistakes.” For months, he lay awake in the mornings, remembering the patients he had failed. “The more I thought about the past,” he recalls in his book, “the more mistakes rose to the surface, like poisonous methane stirred up from a stagnant pond.”
