Common Sense media is an excellent organization and they've given their 2013 awards to many apps by age. They separate the apps by age and rate it by Learning. This is a credible source of information about the apps that you'll want to look into if you're using apps to help students learn.

This wiki was created for an iPad workshop at ESSDACK in Hutchinson, KS on October 18, 2011 by Judy Beam and Mary Frazier. You'll notice the pages of this wiki (on the left hand side) are the Common Core Standards. We have placed iPad apps on each page that might help your students learn that concept.
