Acidity regulators as the name suggest regulate the acidity of food to maintain an optimal level of pH which in turn helps enhance the life of the food product. Acetic acid, citric acid, acetic acid, benzoic acid and sodium salts of the acids are some of the commonly used acidity regulators in food. These regulators are sometimes listed in the label as E numbers like E260, E331(ii) etc. But the FSSAI list of food additives mentions the names without the E number too.

Hyaluronic acid is a straight chain macromolecular mucopolysaccharide composed of repeat disaccharide units of glucuronic acid and N-acetylglucosamine. It's molecular weight is from several ten thousand to several million. It's aqueous solution has outstanding moisture keeping ability, high viscoelasticity and lubricity. Hyaluronic Acid is widely used in cosmetics, health and beauty food.

Potassium Chloride is a white crystalline powder with a salty taste, which is the potassium salt of hydrochloric acid. It is used for food preservation, as a flavor enhancer, to adjust the acidity or alkalinity of food, and as a nutrient supplement in livestock feed.

Gellan gum is also known as Kaike gum and Jielan gum. The main components are glucose, glucuronic acid and rhamnose in a ratio of 2:1:1, and four monosaccharides are linear polysaccharides composed of repeating structural units. There are acetyl and glyceric acid groups in the natural high acetyl structure, they are all located on the same glucose group, and on average, each repeating structure has a glyceric acid group, and every two repeating structures has an acetyl group. After being saponified with KOH, it is transformed into low acetyl gellan gum. The glucuronic acid group can be neutralized by potassium, sodium, calcium and magnesium salts. It also contains a small amount of nitrogen produced during fermentation production.

L-Alanine colorless to white crystalline powder, soluble in water, ethanol, insoluble in ether and acetone. Sodium carboxymethyl cellulose (CMC) is a water-soluble cellulose ether whose solid form is commonly referred to as "sodium cellulose gums" or "cellulose gums". It is produced by the alkali treatment of cellulose from wood pulp and cotton linters, then neutralized with an acid such as acetic acid.

It is used in acid foods below a pH of 4.5, where there is less susceptibility to oxidation and conversion to the ferric form, which results in discoloration. In higher pH foods, the instability can be prevented by complexing with ligands which prevent browning discoloration. It is used in fortification of drinks and juices.

Sodium propanoate or sodium propionate is the sodium salt of propionic acid which has the chemical formula Na(C3H5NaO2). It is used as a food preservative and is represented by the food labeling E number E281 in Europe; it is used primarily as a mold inhibitor in bakery products. It is approved for use as a food additive in the EU, USA and Australia and New Zealand.
