Sorbitol is a sugar alcohol produced by the reduction of glucose, which converts the aldehyde group to a primary alcohol group. It appears in nature as sorbitol hexa-2-ulose, a naturally occurring form of hexanediol. In terms of its physical and chemical properties, it is similar to other polyhydric alcohols.
