Fantastic way to be creative. Try to make a stop-motion video using a normal camera or even camera-phone. Either make the stop-motion (many pictures quickly put behind each other makes a stop-motion film) on the computer or directly on the iPhone: there are many apps out there for that. Let them share their videos (even across the different European pilots) Pedagogical uses: creativity, photography, storytelling.

cool flash app to  make drawings

you draw, then the application turns it into an animated drawing that you can save and embed, all for free. Interesting if you like drawings and animation. Very simple and intuitive. No need for instructions. Pedagogical uses: storytelling in a different style; icebreaker; illustrator

Does it work with tablets? Would be a great drawing tool if you do not have to use your mouse for it.
