iPad has made such a radical change in education with more and more school districts adopting it as a learning tool inside the classroom. Educational Technology and Mobile Learning has been helping teachers all along the way with reviews and tutorials on how to get started using iPad in education. One presents a very anti-IWB viewpoint however it does present some interesting ideas that may be worth considering when trying to ensure the success of you technology program.

Even the interface is very similar. PiratePad (http://piratepad.net/) is another alternative
Google have now included the EtherPad feature in its new version of google docs (It' still in preview and you need to tick a box in the document editing settngs). I'm yet to try it out with a class.
Found that EtherPad also had issues with the 15 users. In a class I would often make more than one pad.
The Art Project powered by Google features interior tours of seventeen world famous art museums.
Select a museum from the list on the homepage and you can virtually tour it using the same interface style you experience in Google Maps Streetview. Inside the museum just double click to zoom to a location. You can also open a floor plan overview and click on a room to navigate to that part of the museum.
