I found this article interesting as we are on the verge of changing over a large portion of our payment system in restaurants here in United States. A large portion of our European industry has already made this move and the technology wave that is in the process of trying to sweep through restaurants is interesting. The dining experience includes the payment process... and the whole thing is very ritualistic, so this represents a larger shift than just switching out payment terminals and SOP's.
