Garlic Scapes are the seed head that shoots up from the center of the garlic near the end of its growing cycle. In some varieties of Hard neck Garlic it produces a seed head. In Elephant Garlic it is a false seed head that just flowers and very seldom if at all produces seeds. We cut them a few days after they emerge and sell them as a delicacy for Gourmet cooks. They only grow on Hard neck Garlic types, and Elephant Garlic. The window to cut these is very small before they go "woody" so we only have them available for 3-4 weeks each year.

There are 23 species of voles known to live in the United States, with about 8 of those being the most prevalent and problematic. Their size varies some by species but they typically grow to between three and nine inches from head to end of tail. The most common fur colors you'll find will be a dark brown or gray.

The Hardneck Scapes can be from any Hardneck variety we grow and have a slightly stronger garlic flavor, although still mild. The Elephant Scapes are mild and have a more subtle garlic flavor.
My favorite part is the flower head bud of Elephant Garlic. I cut the scapes in two inch pieces, and sauté them in butter. The flower bud just melts in your mouth. They stay fresh refrigerated for about three weeks, or can be blanched and frozen. Vacuum sealing Garlic Scapes for freezing works great.

Inchelium Red's outer wrapper is thick, and gives it it's great keeping quality. It has a very pleasing rich robust flavor with a medium pungency. Inchelium Garlic won a National taste-testing contest as being the best tasting garlic in America a few years back.
We use this one when we want a good rich garlic flavor with medium heat, although the heat mellows with cooking. I love the depth of garlic flavor on this one. Native to Washington State, it has adapted well to growing in Northern Ohio Zone 6.
We are in zone 6 but we still get temps of below zero for a few days at a time, in winter. Naturally grown by Organic methods on our family farm.
