That brings in more money for the company and for the employee handling the sale. These employees learn quickly that it's a lot easier to have repeat clients than to try to establish a relationship with a new client. This becomes a drive within your employees that motivate them to do well, and continue doing well. This kind of pay is not for everyone in the restaurant catering business. It takes self-motivated, self-reliant people to make it in this type of environment. It makes people more responsible for themselves and the work that they do.
