Clients will give repeat business and refer your restaurant or catering business if they are properly taken care of by your catering sales people. That brings in more money for the company and for the employee handling the sale. These employees learn quickly that it's a lot easier to have repeat clients than to try to establish a relationship with a new client. This becomes a drive within your employees that motivate them to do well, and continue doing well. This kind of pay is not for everyone in the restaurant catering business.
