Greetings to the family! After making the decision to fulfil my current 4-month-long Indian/Asian/NZ tour without any other instrument but my voice, this is what I could come up with during my very-much-indeed musical stay in Pai, Thailand, right after the PanSiam gathering 2019. In one of our days there with Leon Christian Karmameleon, between open mics, music performances, singing workshops, private vocal lessons, bonfire circlesinging, spontaneous street/stage improvising, scooter riding and hot spring indulging, we met Tommaso Caenazzo (the owner of this handpan @432hz) at our favourite chai shop and thought we could work a bit on 11/8, plus instrument plus voice! There is a much better video version with regards to the quality of music & sound, however this one is hilarious - at least to me! - so I decided to post this one. The ingredients that we have taken for "Matar Paneer Sabji" in this recipe of our day are as follows: 300 grams of cottage cheese 250 grams peas 1 teaspoon red chilli powder 1 teaspoon turmeric powder 1 teaspoon Coriander Powder Half a teaspoon garam masala Little green coriander 1 teaspoon salt 2 pinch Asafoetida (hing) 200 grams onion 250 grams tomatoes 5 to 6 garlic cloves Little ginger. Now heat the pan for a minute and add 1 tablespoon mustard oil to it. Let it heat up for about 1 minute. As soon as the oil gets hot, add cumin seeds. Now cook the cumin seeds till it turns red. As soon as our cumin becomes red, add garlic, onion and ginger paste to it. Mix these well and cook for 4 to 5 minutes. After 4 to 5 minutes, mix all the spices in it. What we have to mix in spices right now are red chillies, turmeric, coriander, salt and asafoetida. Now cook it for about 2 minutes and after that add 150 ml of water to it. After boiling for 2 minutes, add peas to it and cook slowly. After about 2 to 3 minutes, add paneer pieces to it and mix well. In the next 2 to 3 minutes our matar paneer sabji will be almost ready. After that add chopped coriander to it. Now our vegetable is ready. you can say it your dhaba style paneer matar sabji or matar paneer dhaba style sabji. Precautions: 1. This track has been recorded in a single track, single recording, outdoors in the guesthouse's rooftop where I stayed in Varanasi, India last December 2018. The handpan is a Cm SpaceDrum belonging to my dear friend Benjamin Andersen. There are sounds & noises within the track from the buzz of Varanasi; I have not attempted to clear the track from the monkeys, the builders next door or my friend's mobile phone ringtone! I have only added some effects, such as rotor sound and delay to the existing handpan's natural sound. The whole 20-minute-long song is an improvisation inspired by life and music in Varanasi.
