The stage manager said no. Szombathelyi Patrik from HUG stepped in and asked him to do one more song. Hernán Suárez Music was already on stage on calabash and percussion. Patrizio Castrovinci was already playing flute and hulusi with me in the previous song, along with Vértes Marcell who improvised on trumpet with us. I asked them to stick around on stage with me, although they had not heard the song ever before and this is result of our improvisation. This track has been recorded in a single track, single recording, outdoors in the guesthouse's rooftop where I stayed in Varanasi, India last December 2018. The handpan is a Cm SpaceDrum belonging to my dear friend Benjamin Andersen. There are sounds & noises within the track from the buzz of Varanasi; I have not attempted to clear the track from the monkeys, the builders next door or my friend's mobile phone ringtone! I have only added some effects, such as rotor sound and delay to the existing handpan's natural sound. The whole 20-minute-long song is an improvisation inspired by life and music in Varanasi. Now heat the pan for a minute and add 1 tablespoon mustard oil to it. Let it heat up for about 1 minute. As soon as the oil gets hot, add cumin seeds. Now cook the cumin seeds till it turns red. As soon as our cumin becomes red, add garlic, onion and ginger paste to it. Mix these well and cook for 4 to 5 minutes. After 4 to 5 minutes, mix all the spices in it. What we have to mix in spices right now are red chillies, turmeric, coriander, salt and asafoetida. Now cook it for about 2 minutes and after that add 150 ml of water to it. After boiling for 2 minutes, add peas to it and cook slowly. After about 2 to 3 minutes, add paneer pieces to it and mix well. In the next 2 to 3 minutes our matar paneer sabji will be almost ready. After that add chopped coriander to it. Now our vegetable is ready. you can say it your dhaba style paneer matar sabji or matar paneer dhaba style sabji. Precautions: 1.
