Great example of what I think is a student video project on the Giver. An example of how video projects can be used to show student understanding of a book's themes.
Google earth can be a great tool, not just for virtual tours of the past but of the present. For example, when teaching about the ohio river valley, its great to be able to pull it up on google earth and show the contrast between the ORV and say a swamp area near the Potomac. It just helps people become aware of the landscape.

I'll never teach economics, but I came across this and thought some of you would find it useful. This website has different clips from Seinfeld episodes that teach various economic topics... Pretty cool!
