    Chop up the vegetables and sweet potato into bite-size pieces. Place the diced lamb, peppers, butternut squash, carrot, sweet potato in a oven proof tray with a bit of olive oil and juice of half lemon. Sprinkle the rosemary on top and cover with tin foil, cook at gentle heat for 45-55 mins.
