    Great personal article about a second-generation American with immigrant Chinese parents growing up in America and her take on what is considered as authentic Chinese food. In the article, it touches on the idea of having to slightly adjust a cooking style to accommodate for a new group of people. Initially, the writer's perspective is if one's native cuisine is affected by foreign influence then it loses its authenticity. However, when studying the history of many foods, it is noted how cultures from all around the world has had some influence in the inception of local cuisine dishes. Even before globalization became as influential as it is today, the world was already interconnected. I think it is important not to denigrate a cuisine of its authenticity because of slight changes it had made to be more appealing to a different group of people. This should been seen as a positive, as it is trying to expose its culture to a greater amount of people. I think the author summed up restaurants' aim best as "preserving tradition, while adapting to the times" when setting up shop in foreign countries.
