With funding from the Institute of Museum and Library Services, the UCSB Libraries have created a digital collection of nearly 7,000 cylinder recordings held by the Department of Special Collections. In an effort to bring these recordings to a wider audience, they can be freely downloaded or streamed online. On this site you will have the opportunity to find out more about the cylinder format, listen to thousands of musical and spoken selections from the late 19th and early 20th centuries, and discover a little-known era of recorded sound. Lactic acid is used in a variety of food and beverage applications, including as a flavoring agent, preservative, stabilizer, acidified, and chelating agent. It is commonly used in dairy products such as yogurt, cheese, milk, and sour cream, as well as in a variety of fermented foods and alcoholic beverages. In addition, it is used in processed meats, pickles, sauces, and canned fruits, as well as in non-alcoholic beverages such as fruit juices, carbonated drinks, and sports drinks. Lactic acid also provides a tart flavor and helps extend the shelf life of foods.
