  • 爱尔兰威士忌（irish whiskey） 爱尔兰制造威士忌据说至少已有700多年的历史了，还有一些专家和权威人士认为蒸馏技术起源于爱尔兰，而后传到苏格兰的。 爱尔兰威士忌是以80％的大麦为主要原料，混以小麦、黑麦、燕麦、玉米等为配料，制作程序与苏格兰威士忌大致相同，但不像苏格兰威士忌那样要进行复杂的勾兑。另外，爱尔兰威士忌在口味上没有那种烟熏味道，是因为在熏麦芽时，所用的不是泥煤而是无烟煤，爱尔兰成士忌陈酿时间一般为8~15年，成熟度也较高，因此口味较绵柔长润，并略带甜味。蒸馏酒液一般高达86度，用蒸馏水稀释后陈酿，装瓶出售时酒度为40度，名品有：约翰波尔斯父子（john power and sons）、老布什米尔（old bush mills）、约翰·詹姆森父于（john jameson and son）、帕蒂（paddy）、特拉莫尔露：（tullamore dew）等。 爱尔兰威士忌口味比较醇和、适中，所以人们很少用于净饮，一般用来作鸡尾酒的基酒。比较著名的爱尔兰咖啡（irish coffee），就是以爱尔兰威士忌为基酒的一款热饮。其制法是：先用酒精炉把杯子温热，倒入少量的爱尔兰威士忌，用火把酒点燃，转动杯子使酒液均匀地涂于杯壁上，加糖、热咖啡搅拌均匀，最后在咖啡上加上鲜奶油，同一杯冰水配合饮用。
  • 美国威士忌（american whiskey） 美国威士忌与苏格兰威士忌在制法上大致相似，但所用的谷物不同，蒸馏出的酒精纯度也较苏格兰威士忌低。 1．纯威士忌（straight whiskey）是指不混合其它威士忌或谷类制成的中性酒精，以玉米、黑麦、大麦或小麦为原料，制成后贮放在炭化的橡木桶中至少两年。此酒又细分为四种： （1）波本威士忌（bourbon whiskey）。波本是美国肯塔基州（kentucky）的一个地名，所以波本威士忌，又称kentucky stright bourbon whiskey，它是用51一75％的玉米谷物发酵蒸馏而成的，在新的内壁经烘炙的白橡木桶中陈酿4~8年，酒液呈琥珀色，原体香味浓郁，口感醇厚绵柔，回味悠长，酒度为43.5度，波本威士忌并不意味着必须生产于肯塔基州波本县。按美国酒法规定，只要符合以下三个条件的产品，都可以用此名：第一，酿造原料中，玉米至少占51％：第二，蒸馏出的酒液度数应在40~80度范围内；第三，以酒度40~ 62.5度贮存在新制烧焦的橡木桶中，贮存期在2年以上。所以伊利诺、印地安那、俄亥俄、宾夕法尼亚、田纳西和密苏里州也出产波本威士忌，但只有肯塔基州生产的才能称kentucky straight bourbon whiskey。 （2）黑麦威士忌（rey whiskey）是用51％以上的黑麦及其它谷物制成的，颜色为琥珀色，味道与波本不同，略感清洌。 （3）玉米威士忌（corn whiskey）是用80％以上的玉米和其它谷物制成，用旧的炭橡木桶贮陈。 （4）保税威士忌（bottled in bond）是一种纯威士忌，通常是波本或黑麦威士忌，是在美国监督下制成的。不保证它的质量，只要求至少陈年四年，酒精纯度在装瓶时为100? ，必须是一个酒厂所造，装瓶也为所监督。 2．混合威士忌（blended whiskey）是用一种以上的单一威士忌，以及20％的中性谷物类酒精混合而成的。装瓶时酒度为40％，常用来作混合饮料的基酒，共分三种： （1）肯塔基威士忌是用该州所产的纯威士忌和中性谷物类酒精混合而成的。 （2）纯混合成士忌是用两种以上的纯威士忌混合而成的，但不加中性谷物类酒精。 （3）美国混合淡质威士忌是美国的一种新酒种、用不得多于20％纯威士忌和80％的酒精纯度为100proof的淡质威士忌混合而成。 3．淡质威士忌（light whiskey）是美国认可的一种新威士忌、蒸馏时酒精纯度高达161一189proof，口味清淡，用旧桶陈年。淡质威士忌所加的100proof的纯威士忌用量不得超过20％。 在美国还有一种酒称为sour－mash whiskey，这种酒是用老酵母加入要发酵的原料里蒸馏而成的，其新旧比率为1：2。此种发酵的情况比较稳定，而且多用在波本酒中，是由比利加·克莱（belija craig）在1789年所发明使用的。 美国西部的宾州、肯塔基和田纳西地区，水中含有石灰质成份，这是制造威士忌最重要的条件，所以这几个区为美国制造成士忌的中心。美国威士忌的名品有：美格波本威士忌（maker’s mark）、天高（ten high）、四玫瑰（four roses）、杰克·丹尼（jack danie）、西格兰姆斯7王冠（seagvam’s 7 crown）、老祖父（old grand dad）、老乌鸦（old crown）、老林头（old forster）、老火鸡（old turkey）、伊万·威廉斯（evanvilliams）、金冰（jim bean）、野鸡（wild turkey）。 美国威士忌的饮用方法与苏格兰威士忌大致相同，有时也常加可乐兑饮。
  • 加拿大威士忌 加拿大威士忌在国外比国内更有名气，它的原料构成受到国家法律条文的制约。主要酿制原料为玉米、黑麦，再掺入其它一些谷物原料。但没有一种谷物超过50％的，并且各个酒厂都有自己的配方，比例都保密。加拿大威士忌在酿制过程中需两次蒸馏，然后在橡木桶中陈酿2年以上，再与各种烈酒混合后装瓶，装瓶时酒度为45度。一般上市的酒都要陈年6年以上，如果少于4年，在瓶盖上必须注明。加拿大威士忌酒色棕黄，酒香芬芳，口感轻快爽适，酒体丰满，以淡雅的风格著称。 据专家分析，加拿大威士忌味道独特的原因，主要有以下几点：（1）加拿大轻冷的气候影响谷物的质地；（2）水质较好，发酵技术特别；（3）蒸馏出酒后，马上加以兑和。加拿大威士忌的名品有：加拿大俱乐部（canadian club）、西格兰姆斯特醇（segram’s v.o）、米·盖伊尼斯（me guinness）、辛雷（schenley）、怀瑟斯（wiser’s）。加拿大之家（canadian house）。 加拿大威士忌在餐前或餐后饮用，可纯饮也可兑入可口可乐或七喜汽水饮用。
