Modernist Cuisine: The Art and Science of Cooking By Nathan Myhrvold, Chris Young, Maxime Bilet List Price: $625.00 Price: $450.74 Availability: Usually ships in 24 hours Ships from and sold by Amazon.com 34 new or used available from $409.95 Average customer review: (64 customer reviews) Product Description A revolution is underway in the art of cooking. Just as French Impressionists upended centuries of tradition, Modernist cuisine has in recent years blown through the boundaries of the culinary arts. Borrowing techniques from the laboratory, pioneering chefs at world-renowned restaurants such as elBulli, The Fat Duck, Alinea, and wd~50 have incorporated a deeper understanding of science and advances in cooking technology into their culinary art. In Modernist Cuisine: The Art and Science of Cooking, Nathan Myhrvold, Chris Young, and Maxime Bilet--scientists, inventors, and accomplished cooks in their own right--have created a six-volume, 2,400-page set that reveals science-inspired techniques for preparing food that ranges from the otherworldly to the sublime. The authors and their 20-person team at The Cooking Lab have achieved astounding new flavors and textures by using tools such as water baths, homogenizers, centrifuges, and ingredients such as hydrocolloids, emulsifiers, and enzymes. It is a work destined to reinvent cooking. How do you make an omelet light and tender on the outside, but rich and creamy inside? Or French fries with a light and fluffy interior and a delicate, crisp crust that doesn't go soggy? Imagine being able to encase a mussel in a gelled sphere of its own sweet and briny juice. Or to create a silky-smooth pistachio cream made from nothing more than the nuts themselves. Modernist Cuisine offers step-by-step, illustrated instructions, as well as clear explanations of how these techniques work. Through thousands of original photographs and diagrams, the lavishly illustrated books make the science and technology of the culinary arts c

Cooking with Bimby in a moment of recruitment: Exploring conventions and practice persp... - 0 views

Cooking with Bimby in a moment of recruitment: Exploring conventions and practice perspectives Monica Truninger Institute of Social Sciences, University of Lisbon, Portugal, monica.truninger@ics.ul.pt Abstract Every two minutes, one Bimby is sold somewhere in the world. This multi-food processor (also known as Thermomix) has gained wide sales success in many southern European countries and promises to revolutionize the way people cook, learn about cooking, coordinate and plan food practices at home. In a period where debates about cooking skills are paradoxical; some voices concerned with deskilling, while others enhance the visibility of cooking education in the media, this domestic technology is heralded as a 'magic' gadget that turns dreadful cooks into notable 'chefs'. This processor cannot be purchased in shops; it is being directly sold by salespersons that make a demonstration in future clients' houses. These are usually social events where the host invites friends and family for a free meal swiftly produced by Bimby under the demonstrator's supervision. Demonstrators can be seen as cultural intermediaries both marketing the product and conveying normative and symbolic messages about cooking, and also instructing on technology use. The event mixes economic, social and cultural elements, and offers a good illustration of the cultural economy workings operating in it. Based upon a case study of a demonstration - seen as a moment of recruitment of new cooking practitioners - the article examines issues around cooking competence informed by theories of practice (Shove and Pantzar, 2005; Shove et al., 2007) and conventions theory (Boltanski and Thévenot, 2006 [1991]; Thévenot, 2006). It is suggested that bringing a conventions together with a practice perspective offers up the possibility of developing a distinctly sociological account to analyse cooking competences in particular, and practices more generally. cooking competence convention theor

The "Bimby phenomenon" and the change in food consumption lifestyles Urbano, Claudia Valadas CesNova - Sociology Faculty of Human and Social Sciences - New University of Lisbon Lisbon, Portugal Jorge, Nuno Social and Organizational Sciences Polytechnical Institute of Santarem Santarem, Portugal Keywords sociology or consumption, food, lifestyle Bimby (known as Thermomix in several countries) is an electronic device that helps to produce full meals and is nowadays part of the lifestyle of a significant proportion of Portuguese population. It is an expensive device which costs more than twice the portuguese minimum wage, apparently being only accessible to certain social groups. However, it seems to be a cross-class phenomenon. Without knowing exactly which are the socioeconomic characteristics of Bimby´s users, due to absence of specific researches on this matter, it seems that there is a change in practices of cooking and eating habits, associated to a different investment on consumption of food. There are about 80,000 Bimby machines sold in Portugal. Despite the analysis of social classes, we propose an exploratory approach to the Portuguese online forums (four exclusively focused on the Bimby theme): through a qualitative analysis of the posted messages, we aim to understand what changes occurred in the habits of food consumption produced by "bimbyfication" of Portuguese homes, besides the analysis of other issues beyond the mere exchange of recipes and cooking techniques with Bimby. After a modernization of food, with McDonaldization and the empire of fast food, in a modern society of fast consumption and accelerated routines with outdoor meals, is Bimby creating a new indoor lifestyle? Which changes these devices like Bimby will produce in Portuguese food lifestyles? Will it be a consumption fever, or a trend, such as that occurred in the 80s with blenders, machines to cut ham, and homemade bread mixers, which led many people to buy them despite their short u

"The Bimby Phenomenon" studied in Europe | Super Kitchen Machine (Thermomix) - 0 views

"The Bimby Phenomenon" studied in Europe European Sociological Association  | Conference Abstracts  |  September 2009 Thermomix watchers will be interested to know that when the European Sociological Association held its 9th annual meeting in Lisbon, Portugal (September 2009), two studies regarding the Sociology of Consumption were specifically focused on the Bimby/Thermomix phenomenon. Though the abstracts are brief, we find it interesting to see that:  in Europe, as in other coutries, where the price of Thermomix is relatively high when compared against other kitchen appliances, the ownership of this machine crosses all economic groups. It seems that cost is not an obstacle, when the value of a product is so easily appreciated. 1) Cooking with Bimby: food practices, competences and kitchen technologies Presented by Monica Truninger (University of Lisbon) "The Worwek's webpage (a German company of kitchenware) proudly announces that every two minutes one Bimby is sold somewhere in the world. Bimby (also known as Thermomix) is a kitchen robot that promises to revolutionise the way we cook, learn about cooking, coordinate and time plan our food practices at home. It is a pricey multi-functional food processor, cooker, steamer and self-cleaner. In Portugal, despite the current economic crisis, 3945 of these robots were sold last December and current numbers indicate that there are around 80000 people in the country with one of these machines in their kitchens (Diário de Notícias, 11th January 2009). In 2008, there were 28500 new clients and increasing media coverage is likely to contribute to disseminate further this new fad. Renowned Portuguese chefs also endorse it and are often seen in TV programmes with one of these machines praising its time saving and convenience qualities." "The robot cannot be purchased in shops, it being directly sold by sales representatives that make a demonstration in future clients' houses. These are usually social

Tefal Actifry Review | Tefal Actifry - 0 views

Tefal Actifry The Tefal Actifry allows you to cook tasty, crispy fried dishes without the excess fat that accompanies fried foods. The Tefal Actifry is designed to fry your foods with a mere tablespoon of oil. The Actifry has been used by many to produce crispy, heatlh conscious foods, such as French fries, without the unhealthy number of calories and trans-fats that accompany these foods when eaten at a restaurant. How Does The Tefal Actifry Work? The Tefal Actifry accomplishes this by utilizing a stirring paddle and pulse heating system, which cooks your food thoroughly and evenly. The pulse heat system distributes the oil evenly, while the stirring mechanism ensures that your food is not over cooked. Moreover, the amount of work required to produce restaurant-style French fries and other crispy foods is absolutely minimal. Just place two pounds of sliced potatoes into the removable pan. Then drizzle one tablespoon of your choice of oil and engage the timer. The Actifry is a set-it-and-forget it device. Once your French fries are ready, a gentle audible alarm will sound, and you can remove delicious crispy fries from the Tefal Actifry. What Else Can I Cook With My Tefal Actifry? With the Tefal Actifry, you are not limited to cooking just French Fries. The Tefal Actifry will accommodate tens of thousands of recipes. Simply place the ingredients into the pan as directed, close the lid and engage the timer. The transparent viewing window enables you to view the food as it is being cooked. How Do I Clean My Tefal Actifry? The engineers at Tefal understand that clean-up of a home appliance is equally as important as its ability to perform the desired task. Cleaning up your Tefal Actifry is mind-blowingly easy. Simply remove the dishwasher-safe pan, lid and paddle, and place them into the dishwasher. Alternatively, you can choose to clean these items by hand. Either way, clean up is incredibly easy and painless. If you enjoy eating crispy fried food, but
