Behold the microscopic jungle in and around you: tiny organisms living on your cheeks, under your sofa and in the soil in your backyard. We have an adversarial relationship with these microbes -- we sanitize, exterminate and disinfect them -- but according to microbiologist Anne Madden, they're sources of new technologies and medicines waiting to be discovered. These microscopic alchemists aren't gross, Madden says -- they're the future.

For this third episode of our video series with Vox's Future Perfect team, we went to North Carolina, a state that's been battling the public health and environmental impact of hog lagoons for decades. The issue is especially grave in this state due to the vulnerable populations who bear the brunt of this pollution, and because hog facilities are so concentrated in such a small area.

In this case study, students follow "Mr. Okoro" as he makes the long journey with his sick daughter "Ada" to seek medical attention at the nearest clinic in Enugu, Nigeria. It is the rainy season, and "Dr. Fabian" from the Division of Parasitic Diseases and Malaria has been called in to investigate a suspected outbreak of malaria. Students learn about the circumstances in Ada's background that may have led to her illness, and then adopt the perspective of Dr. Fabian as she investigates the outbreak. They consider the epidemiological triangle, the different stages of the Plasmodium parasite lifecycle and how it leads to malaria, and evaluate the broader societal factors and future implications of malaria in Sub-Saharan Africa. The case was designed for upper-level global health, public health, and human biology courses, but could also be adapted for general biology, health studies, infectious disease, and epidemiology courses.

That's the premise behind XPRIZE Feed The Next Billion, a $15 million competition incentivizing teams around the globe to produce chicken breast or fish filet alternatives that outperform conventional chicken and fish in a number of areas - from sustainability to nutrition to animal welfare, as well as taste and texture. To achieve that, teams are leaning into two methods: cultivated meat and plant-based meat alternatives. The multi-year competition is underway right now, and could provide us with the breakthrough we need to change how we eat, for good.

The researchers' approach to developing the method was adopted from food science, where it is used for control of complex industrial processes. Basically, it involves handling and analysing huge amounts of biological data in a holistic and explorative way. The researchers analysed all compounds a blood sample contains instead of - as is often done in health and medical science - examining what a single biomarker means in relation to a specific disease. "When a huge amount of relevant measurements from many individuals is used to assess health risks - here breast cancer - it creates very high quality information. The more measurements our analyses contain, the better the model handles complex problems," continued Professor Rasmus Bro.

 Students must consider the role of rumen bacteria and how genetic modification may alter the potential of these bacteria. The case engages students in learning basic principles of bacterial genetics and biotechnology as they consider how microbes and microbial processes impact the environment. The case could also be used in an introductory genetics or biotechnology course.
