Clean and stem spinach; tear into bite-size pieces and throw in a bowl. Slice strawberries, cube avocado, and coarsely chop macadamia nuts. Add. Though macadamia nuts are ideal, Brazil nuts or cashews may be used as a substitute-because really, who besides me has raw macadamia nuts on hand.Drizzle salad mixture with vinegar and agave, add a pinch of salt (to bring out the sweetness) and toss.Dish onto a plate and garnish with fresh ground black pepper. Serve within an hour of preparing as the spinach will wilt.Serves 1 starter salad. Double the recipe for an entree, or multiply the above quantities by the number of guests.

Pasta Sauce Recipe - Creamy Roasted Garlic Tomato Sauce
Ingredients:
6 large Roma tomatoes, quartered
1 small onion, peeled, halved
6 garlic cloves, peeled
2 tablespoons (30 ml) olive oil
2 tablespoons (8 g) chopped fresh parsley
1 cup (240 ml) soy milk or low fat milk
salt and pepper
Instructions:
Microwave shallot and balsamic vinegar for 1 minute on High.
Place all ingredients, except the olive oil, into the Vitamix container in the order listed and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High.
Remove the lid plug and add olive oil in a thin stream through the lid plug opening.
Blend for 1 minute.
