Bennefits of ginger - 0 views

Ginger, a tropical plant related to turmeric and cardamom, produces a pungent, sweet-tasting root. Herbal tea aficionados steep freshly grated ginger in hot water to make tea, and various cuisines incorporate fresh or dried ginger into both sweet and savory recipes. Herbalists recommend ginger root as a natural treatment for a wide range of health conditions. Read more and try a delicious tea recipe here

WHFoods: Mushrooms, crimini - 0 views

White button mushrooms (Agaricus bisporus), although often considered a poor relation of exotic, expensive varieties like maitake and matsutake mushrooms, provide as much or even more anti-oxidant activity as their costly cousins. Researchers at the Institut National de la Recherche Agrinomique in France found that the free radical scavenging ability of the humble button mushroom was equivalent to, if not higher than, that of maitake and the matsutake mushrooms - both of which are highly prized in Japanese cuisine for their reputed ability to lower blood pressure and fight cancer.

WHFoods: What are your thoughts on coconut oil? - 0 views

  •
"Coconut oil is a staple food in many parts of the world. You can travel to Thailand, the Caribbean, parts of Brazil, countries in Africa, and the vast southern half of India and find this oil on center stage when it comes to delicious and healthy cuisine. The popularity of this oil is partly due to its stability, ease of use in cooking, and taste. Like all foods, the quality of coconut oil has a lot to do with its potential health benefits. Refined coconut oil that has been heavily processed, bleached, and deodorized is not going to provide you with the same desirable balance of fatty acids, or the same beneficial polyphenol content, as either virgin coconut oil or less extensively refined coconut oil (sometimes called "naturally refined" by the product manufacturers). Choosing organic coconut oil is a good way to assure you of higher quality in this regard. However, at the same time, there is such a long track record of coconut oil use in many cultures and their food traditions that I will be surprised if the research doesn't eventually show some key health benefits. Some of these health benefits are likely to be related to the unusual fatty acid composition of coconut oil, and other benefits are likely to be associated with the special polyphenols found in this oil (when virgin or very lightly refined). Also, it's the natural pattern of fats found in coconut oil that seems especially important to me, in addition to the blend of fats in the overall diet that results from the inclusion of coconut oil. If you decide to include coconut oil in your diet, I therefore recommend that you continue to use other high-quality oils (like extra virgin olive oil) as well. One of the practical benefits of coconut oil is that it has a higher smoke point than many other oils, so that you can cook with it at normal stovetop temperatures and have less concern about oxidation. The smoke point for lightly refined coconut oil is about 450ºF (232ºC) while the smoke point for unrefi

A Brief History Of: Fad Diets - TIME - 0 views

  •
"Despite its dubious beginnings, fad-dieting gained mass appeal in the 19th century. In 1829, Presbyterian minister Sylvester Graham touted the Graham Diet - centered on caffeine-free drinks and vegetarian cuisine, and supplemented by the eponymous Graham Cracker - as a cure for not just obesity but masturbation (and the subsequent blindness it was thought to cause.) The diet became so popular that the students of Oberlin College were forced onto it for a brief period in the 1830s before they successfully rebelled through mass dissent in 1841. Thirty-five years later, an English casketmaker named William Banting became famous by pioneering the concept of a low-carbohydrate diet, which helped him lose 50 lbs. He published his results in the 1864 "Letter on Corpulance," and the plan became so popular that "banting" became a synonym for dieting across Britain. "

Tofu - Wikipedia, the free encyclopedia - 0 views

  •
"Tofu (豆腐, tōfu?), or bean curd[5] is a soft white food made by coagulating soy milk, and then pressing the resulting curds into blocks. It is of Chinese origin,[6] and part of East Asian and Southeast Asian cuisine such as Chinese, Japanese, Korean, Indonesian, Vietnamese[7] and others.[8] There are many different varieties of tofu, including fresh tofu and tofu that has been processed in some way. Tofu has very little flavor or smell on its own, so it can be used either in savory or sweet dishes, and is often seasoned or marinated to suit the dish A study done by the Pacific Health Research Institute followed over 3000 Japanese men between 1965 and 1999, which showed a positive correlation between cerebral atrophy and consumption of tofu.[42] However, this study by L.R. White, et al., from the National Institute of Aging, NIH, was rejected as not credible by the Food and Drug Administration."

Tempeh - Wikipedia, the free encyclopedia - 0 views

"Tempeh, or tempe in Indonesian, is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form. Tempeh is unique among major traditional soyfoods in that it is the only one that did not originate in China or Japan. It originated in today's Indonesia, and especially popular on the island of Java, where it is a staple source of protein. Like tofu, tempeh is made from soybeans, but tempeh is a whole soybean product with different nutritional characteristics and textural qualities. Tempeh's fermentation process and its retention of the whole bean give it a higher content of protein, dietary fiber, and vitamins compared to tofu, as well as firmer texture and stronger flavor. Because of its nutritional value, tempeh is used worldwide in vegetarian cuisine; some consider it to be a meat analogue. The soy protein in tempeh becomes more digestible as a result of the fermentation process. In particular, the oligosaccharides that are associated with gas and indigestion are greatly reduced by the Rhizopus culture. In traditional tempeh making shops, the starter culture often contains beneficial bacteria that produce vitamins such as B12[1][2] (though it is uncertain whether this B12 is always present and bioavailable[3]). In western countries, it is more common to use a pure culture containing only Rhizopus oligosporus which makes very little B12 and could be missing Klebsiella pneumoniae which has been shown to produce significant levels of B12 analogs in tempeh when present. Whether these analogs are true, bioavailable B12, hasn't been thoroughly studied yet.

Brain (as food) - Wikipedia, the free encyclopedia - 0 views

"The brain, like most other internal organs, or offal, can serve as nourishment. Brains used for nourishment include those of pigs, squirrels, horses, cattle, monkeys, chickens and goats. In many cultures, different types of brain are considered a delicacy. In the Southern United States, canned pork brain in gravy can be purchased for consumption as food. This form of brain is often fried with scrambled eggs to produce "Eggs n' Brains".[1] They are part of the menu in many family owned restaurants throughout the region. The brain of animals also features in French cuisine, in dishes such as cervelle de veau and tête de veau."
