You can filter the Add Ins and just look at those for Education.  There is a free Add in from Text Help that will help you collect your highlights of the document. Teachers can create documents and add the Add ins the students need.

Google Tools for Specials Needs.  Check out the Slide Show with recommendations for apps and extensions.  Good for students using Chrome Books, or Chrome on any computer.

Google Keep  is an Android and Google App.  It is a to do list manager but it now has added OCR capabilities

Two Great Tools to Create Image Based Quizzes ~ Educational Technology and Mobile Learning.  I like the one that uses Google Docs.  You can  probably include graphics for answers to make the quiz more UDL
