    Many Welsh restaurants have opened in the last decade, sparking a revival and continuation of the food our forebears relished.

    One with the mainstays of the Welsh kitchen is 'cawl', a nutritious and warming lamb together with root vegetable stew. There are variations on the recipe but most agree that the best cawl is started two days before serving, thus giving the flavours time for you to develop. Often cawl is served as a two-course meals. The broth would get strained off and served for a soup with bread. Then along came this meat and vegetables being a main course. Very likely there may be leftovers and they seems the following day, tasting better.

    A really famous Welsh dish is laverbread. Which is not some sort of bread and nothing about volcanoes. Laver is a great edible seaweed, washed to remove any sand and cooked in a frying pan, usually with bacon fat. Laverbread is usually served with a fried breakfast. It is high with nutrients and iodine but is definitely an acquired taste.

    Bara Brith can be a cross between a fruited bread in addition to a cake and is no lightweight sponge. It is dense and heavy and then a buttered slice will fulfill the most demanding appetites looking for something sweet after their own cawl. There are two variants - one with yeast and one without. Bara Brith was come to Argentina with settlers inside 19th century and is right now known there as 'torta negra' or even 'black cake', which may reference this strong black tea that is one of the ingredients.

    Then there are Welsh cakes, small round cakes the size of a cookie, cooked on a bakestone or heavy griddle - my husband's favourite... he'd rather have a tin of Welsh cakes for a present than anything more.

    Welsh rarebit is a variation of cheese with toast or, more correctly, a sauce made using strong cheese, butter, flour and ale, spooned onto toast and grilled until golden and bubbling.

    Welsh lamb is particularly good - it is usually claimed that the climate is good for rearing hardy, lean lamb, which produce lamb with the excellent flavour. There are many good recipes for preparing roast lamb. Do that recipe : "Welsh Lamb with Gin and Cranberry Accompanied by Roast Onions".
    2 tablespoons butter

    2 tablespoons gravy flour

    1/4 teaspoon salt

    1/8 teaspoon spice up

    2 k-cups fat free half and half

    two cups pre-shredded mild Cheddar parmesan cheese

    8 pieces lightly toasted bread

    1 smack deli turkey, thinly sliced (or higher)

    1 box frozen broccoli spears, defrosted

    Excess pre-shredded mild Cheddar parmesan cheese

    Method

    Liquefy butter in small saucepan over low heat. Whisk within flour, seasonings, and cook for one minute. Add half together with half, whisking constantly, and cook until sauce starts to thicken. Lower the heat and add the cheese. Cook for about several minutes, or until the cheese has completely melted. Cover and set aside. Lay toast in a shallow casserole. Mound various slices of turkey with each slice of bread. Place a broccoli spear on top of the turkey. (You may have to cut spears into thinner strips.) Place cheese sauce over sandwiches together with garnish with extra Cheddar. Broil until the cheese is lightly browned. Makes 4 servings.
